I recently visited my homeland, northwest Arkansas. Walmart country...and the land of Onyx Coffee Lab.
I was introduced to Onyx during my Nashville arc at a shop called Retrograde. I remember like it was yesterday - stumbling upon a really nice coffee shop right in one's own neighborhood is always a game changer. Many times I sat inside those walls blowing my half-baked budget on salmon toast. (I have no regrets.)
For today's brew, I decided on a 30g dose since I'd probably be taking another serving as a roadie to help take the edge off of the errands I had to run.
Something silly happened during the bloom: the battery died on my housemate's Timemore Black Mirror. Not to be thwarted, I figured "well, I used 30g of coffee. If I fill the Origami cone to the brim, it usually fits ~300g. I'll just do that twice and hopefully end up with approximately a 1:20 ratio."
I proceeded to do exactly that. I filled the Origami filter to the brim and went off to do something else for a while. I returned several minutes later to conduct the second and final giant pour. I realized at that moment that my carafe has approximate measurements - 300ml, 400ml, 500ml. I'd already gone pretty far past 500ml, so I stopped the pour and removed the still-draining cone.
My instincts did not fail me. What resulted was not the most interesting brew of all time, but it was, given the circumstances, still quite good. I perceived almost cookies & cream ice cream. The mildest possible acidity. Gentle, crushable, no astringency or bitterness whatsoever.
This coffee holds up very well to large ratios (adjust your temp accordingly to mitigate overextraction).
